Although the thread topic includes photos, html is turned off.  So, I've been printing up recipes for Spring time veggie side dishes and I was exchanging quips on another board, when someone asked me for this recipe.  I used to bake a lot...cookies, cakes, pies, etc.  I was a sweet junkie until I was about 22 and lost my zest for sweets.  I occasionally have something sweet but anyway.  I was watching the Food Network one day (as usual) and came across this recipe that used some different ingredients.  This is my version that is published in my Historical Society's cookbook.

No "Beef" Meatballs
 
1 pkg. ground turkey
1 pkg. ground pork
1 pkg. large portabella mushrooms, finely chopped
Spinach, enough to yeild 3/4 cup when chopped in food processor
3 Tbsp. Worcestershire Sauce
1/2 cup Egg Beaters
2 Tbsp. Italian Seasonings
2 Tbsp. Parmesan Cheese
2 lg. garlic cloves, finely chopped
3/4 cup of plain bread crumbs
Canola Oil
Tomato sauce or spaghetti sauce

Add all ingredients to a bowl. Mix well and form meatballs into a size you like. Saute meatballs in a fry pan with Canola oil until browned. Finish cooking for about an hour in sauce.

Happy 4th of July everyone.  I thought I'd share a recipe that I'm making for Happy Hour today:

Antipasto Platter
 
1 (8-oz.) block mozzarella cheese
1 (9-oz.) package Oscar Mayer shaved Virginia-Brand Ham
1 pt. grape tomatoes, halved
1 (6-oz.) can whole ripe black olives, drained
12 pickled banana peppers
1 small red onion, thinly sliced
1/2 cup olive oil
1/4 cup white wine vinegar
4 garlic cloves, minced
1 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper

1.  Cut mozzarella cheese into 24 thin sticks.  Wrap each stick with 1 ham slice and place in an 11 x 7-inch dish.  Add tomatoes and next 3 ingredients.

2.  Whisk together olive oil and next 6 ingredients.  Drizzle over mixture in dish.  Cover and chill 8 hours or up to 24 hours, turning occasionally.  Drain and transfer to a serving dish.  Makes 6 servings

*You can use any ham from the deli and it's okay to serve right away.

Happy Hour still going on but the app. is gone.  Everyone enjoyed it, mostly Marc.
